Homemade Strawberry Cookies & Cream Ice Cream

One of my goals for the summer is to make more homemade ice cream. My husband LOVES ice cream and he got a Cuisinart Ice Cream Maker a few years ago, but sadly we really haven’t used it very much. Which is a shame, since this ice cream maker is so easy to use. Plus, it’s a lot of fun creating ice cream flavors that you might not find at your local grocery store. When I told my daughter that we would be making more of our own ice cream this summer. She was really excited to create an ice cream flavor that she had never eaten before. So she thought it would be yummy to combine two of her favorite ice cream flavors, Strawberry and Cookies & Cream. Which led us to make Strawberry Cookies & Cream ice cream for our first batch of homemade ice cream this summer.

The Strawberry Cookies & Cream ice cream is so delicious!!!  I just had to share the recipe for how we made it using Cuisinart Ice Cream Maker. If you have a different ice cream maker simple follow the directions for how to use your machine.

Strawberry Cookies & Cream Ice Cream

Ingredients

  • 1 1/2 Cups Fresh Strawberries, hulled
  • 3/4 Cup Whole Milk
  • 2/3 Cup Granulated Sugar
  • Pinch of Salt
  • 1 1/2 Cups Heavy Cream
  • 1 1/2 tsp Pure Vanilla Extract
  • 8 Cream Filled Chocolate Cookies like Oreo's or Newman's O's

Instructions

  1. Place ice cream freezer bowl in the freezer at least 24 hours before you start making ice cream.

  2. Put the strawberries into the bowl of a food processor fitted with the chopping blade. Pulse strawberries rough/finely chopped (depending on if you like bigger chunks or smaller pieces of strawberries in your ice cream). 

  3. In a medium bowl, use a hand mixer on low speed or whisk to combine milk, sugar, and salt until sugar is dissolved. Stir in heavy cream and vanilla. Stir in chopped strawberries with all juices. Cover and refrigerate 1 to 2 hours. 

  4. Place ice cream freezer bowl onto the ice cream maker base. Then attach paddle to the lid and insert it into the ice cream freezer bowl. Turn on ice cream maker and then pour the mixture into the ice cream freezer bowl. Allow churning for 15 minutes.

  5. After ice cream has churned for 15 minutes. Add chilled cookies to the ice cream freezer bowl. Continue to churn for 5 minutes.

  6. Turn off ice cream maker and you are ready to enjoy your ice cream. Or you can place ice cream in a freezer safe container and freeze for 1 to 2 hours to allow ice cream to further harden.

    Ooh, I love that you combined these two flavors. I have never made my own ice cream but I’d love to try it out.

      Making your own ice cream is a lot of fun. I really like the Cuisinart Ice Cream Maker that we have. It’s not like the old school ones that need rock salt. It’s really easy to use.

    We have a Cuisinart ice cream maker as well as the Ben & Jerry’s ice cream “cookbook.” It’s such fun. This combo of flavors is genius, though!

    My kids are going to love this! I’m not going to tell them I made it otherwise they’ll keep bugging me to make more. BTW Sonya, how to do you convert the strawberry into vanilla so the base is vanilla? Would that be possible? My eldest loves vanilla ice cream so I’m sure he’ll ask for that next.

      To make a vanilla ice cream use 1 cup whole milk, 3/4 cup granulated sugar, pinch of salt, 2 cups heavy cream, and 1 tablespoon pure vanilla extract. Then add the cookies during the last five minutes of churnin. I hope you enjoy both recipes. 😊
