Gratitude & Thanks: Unexpected Surprises, Tacos, & More

grat & thanksI’m thankful for unexpected surprises. I was clearing all of the leaves out of my garden box when I saw that I had thyme growing in my box. I had planted some thyme seeds last year in one of those seed pods and it never grew in my box. Well, I guess it was too hot when I planted itย because I have a nice amount growing from one pod now ๐Ÿ™‚

I’m thankful that we celebrated my son’s 8th birthday last weekend. We had a lot of fun going to some of his favorite places. We went to the kids club at our local Whole Foods, Build-A-Bear, and Chuck E. Cheese.

I’m thankful that my kids are sweet little people (most of the time ๐Ÿ™‚ ). Yesterday I told my son I was tired and he asked me what chores I still needed to do, so he could do them for me.

I’m thankful that Hobby Lobby has McCall’s patterns on sale for $1.99 each this week.

I’m thankful for plantains. They are one of my favorite sweet treats.

I’m thankful for tacos. I made some gluten-free vegetarian tacos with tofu, rice, black beans, and avocados. I also had lettuce and salsas on them, but I forgot to add them before I snapped a picture of my husband’s plate.

I’m thankful that my husband gives good advice.

I’m thankful for time outside and sunny days.

What are you thankful for this week?

They both enjoyed going to all those places. We didn’t have a party with friends this year. So we had a family day full of fun. It was less stressful than a party.

Just this week I have been able to finally quit my job and stay home with my son. I am so incredibly thankful! Every night, I list off everything I am thankful for in my life, and I try to focus on my gratitude instead of what I am worrying about for the next day. So important to stop and appreciate all the little things in your life.

Happy birthday to your son. That is awesome that your thyme came up this year. I kinda wish my tomatoes would do that but I’m not crossing my fingers.
